Oatmeal Banana Pecan Pancakes

This is a little spin on the classic South Beach Diet oatmeal pancakes.  I made this for Bob and myself last weekend and it is such a perfect breakfast for fall 🙂

Oatmeal Banana Pecan Pancakes
(adapted from South Beach Diet oatmeal pancakes)

1/2 cup old-fashioned rolled oats
4 egg whites
1/4 cup cottage cheese (ricotta works too)
1 tsp vanilla
1/2 tsp cinnamon
dash of nutmeg
2 bananas – thinly sliced
Chopped pecans
Good maple syrup

1.  Blend the oats, egg whites, cottage cheese, vanilla, cinnamon and nutmeg until smooth.
2.  Spray a large skillet with non stick cooking spray and turn heat up to medium high.
3.  Cook your pancakes!  After the batter is poured into the pan, I added a few banana slices.  Flip, and you have gooey banana goodness inside 🙂
4.  Top your pancakes with extra banana slices, chopped pecans, and a drizzle of maple syrup.
