How to Cook the Perfect Omelette

Hi everybody! 

Well, Bob and I didn’t win the Book of Mormon lottery on Saturday 😦  Instead we went to see the Hansel and Gretel movie which, surprisingly, I really liked! 

On Sunday morning I made omelets for breakfast, and I think I’ve finally mastered how to cook them perfectly.  Here’s how!

1.  Wisk together all ingredients in a bowl.  This is my favorite combination, which makes 2 omelets:  4 eggs, chopped spinach, fresh basil, chopped tomatoes, mozzarella cheese, salt, pepper and garlic.


2.  Spray a large skillet with non-stick cooking spray, and heat over medium high heat.  Add egg mixture and cook until mostly done.


3.  Now for the trick!  Stick the entire pan under the broiler for another 2-3 minutes.  This cooks the top of the omelette so you can fold it in half, without the runny middle 🙂


4.  Return pan to stove top.  Add another sprinkle of cheese (if you wish) and flip.


5.  Cut the omelette in half and serve with toast and fruit.  Enjoy!
