Crunchy Chicken Salad

Hey there ūüôā¬† On this very gloomy Tuesday, I wanted to share a very delicious salad recipe with you!

This is another one of my Mom’s, but over the years I’ve tweaked it a bit.¬† The original recipe called for iceberg lettuce, but I prefer Romaine.¬† It’s much easier to chop up and has more nutritional value!¬† Instead of poached chicken, I like to use roasted to add more flavor.¬† A shredded rotisserie chicken is fabulous, or you can just roast up a few¬†chicken tenders like¬†I¬†did today!¬† Here’s how you make it:

Crunchy Chicken Salad

makes 2 salads

1 head Romaine lettuce
2 scallions
Shredded chicken
Toasted slivered almonds & sesame seeds
Classic 3-2-1 dressing

Start by thinly slicing the head of Romaine and scallions.  Divide into serving bowls.


Next, toast the almonds and sesame seeds.  To do this, just heat the nuts in a skillet, stirring occasionally until they are fragrant.  Be careful not to burn!  Add to your greens.

Add the shredded chicken and top with my easy 3-2-1 classic dressing.¬† It’s just 1 tbsp sugar, 2 tbsp vinegar, 3 tbsp olive oil, salt and pepper.¬† Toss everything together and enjoy!!

How to Cook the Perfect Omelette

Hi everybody! 

Well, Bob and I didn’t win the Book of Mormon lottery on Saturday ūüė¶¬† Instead we went to see the Hansel and Gretel movie which, surprisingly, I really liked!¬†

On Sunday morning I made omelets for breakfast, and I think I’ve finally mastered how to cook them perfectly.¬† Here’s how!

1.  Wisk together all ingredients in a bowl.  This is my favorite combination, which makes 2 omelets:  4 eggs, chopped spinach, fresh basil, chopped tomatoes, mozzarella cheese, salt, pepper and garlic.


2.  Spray a large skillet with non-stick cooking spray, and heat over medium high heat.  Add egg mixture and cook until mostly done.


3.¬† Now for the trick!¬† Stick the entire pan under the broiler for another 2-3 minutes.¬† This cooks the top of the omelette so you can fold it in half, without the runny middle ūüôā


4.  Return pan to stove top.  Add another sprinkle of cheese (if you wish) and flip.


5.  Cut the omelette in half and serve with toast and fruit.  Enjoy!


Easy Spinach Quiches

Happy Saturday everyone! ¬†Today I’d like to share a recipe that makes an awesome snack or light breakfast.


Easy Spinach Quiches

3 eggs
1/2 bag chopped spinach, thawed and squeezed!
3/4 cup shredded Mozzarella cheese
salt, pepper, and garlic to taste

1.  Preheat oven to 350 degrees.  Spray a muffin tin with nonstick cooking spray.
2.  Combine all ingredients in a bowl.  Portion into muffin cups.
3.  Bake for 15-20 minutes, or until eggs are set.
4. ¬†Enjoy a couple with your favorite fruit ūüôā

Feel free to swap out any veggies or cheese you like.  Try mushrooms, tomatoes, zucchini, basil, peppers, and feta cheese!

Welp, Bob and I are off to try the lottery for Book of Mormon! ¬†This will be our 4th time…hoping the 4th time will be the charm. ¬†Fingers crossed!
